Ice Cream Cake!

This past weekend was my boyfriends birthday so I decided to make him an ice cream cake! His favorite ice cream flavor is Reese's peanut butter so he naturally voted for that. Enjoy! 


Ingredients: 
any flavor of cake mix (he decided on yellow cake)
1/3 cup of cooking oil
3 eggs 
1 cup water
1 quart ice cream
any flavor of frosting (I chose milk chocolate)


Recipe:
To start off, turn the freezer to its highest settings to make sure that the ice cream dpesnt melt. Then go ahead and pre-heat the over to 350 and spray two circular 8 inch cake pans with Pam. In a large bowl, mix together the cake mix, oil, and water. In a separate small bowl, crack and beat the eggs, then mix into the large bowl. Stir until there are no more clumps (about 2 minutes). 


Pour the batter equally into the two pans and cook in the oven for 30 minutes. The cooking time will vary for different ovens so be sure to keep an eye on it! As you can tell in the pictures, I left them in the oven for a few minutes too long. The cake is done when you can stick a fork/skewer into the cake without batter sticking to it. When the cakes cools, put one onto a plate and level off the top so that the ice cream has a flat surface to sit on. Make sure the cakes cool completely before going to the next step! 


Now you are ready to add the ice cream! I'm sure there are better ways of doing this, but I just scooped up the ice cream and plopped it onto the bottom layer of cake. Try to make the ice cream layer about as thick as the cake layers, but its really a personal choice how much you add. Place the second layer on top of the ice cream and place back into the freezer. If you have the patience (we clearly did not), wait about an hour to allow the ice cream to harden. 


Next, stir up the frosting and/or follow the directions on the frosting container. Take a knife and spread the frosting over the cake on all sides. You can either serve right away or place back into the freezer. We were way too hungry and decided to dive right in. Serve with a glass of milk and enjoy! 


Fixes for next time: make sure the freezer is cold enough that it doesn't just melt like mine (and have patience to allow the cakes to cool completely before adding the ice cream)! Melting was obviously an issue.
