Chicken and Green Bean Stir Fry

I've come to the realization that I mainly only have recipes on here of assorted desserts and breads, but that is about to change. I made this recipe a while ago, but I just had finals and had to deal with moving apartments and so it's been really hard to sit down and update this blog. Enjoy the recipe!


Ingredients:
1 frozen bag of green beans or broccoli
1 sweet/yellow onion
3 raw chicken breasts
1 bottle of sauce (can be teriyaki, or curry, etc-- we used a sauce found at our local market)
1 cup of brown rice


Recipe:
The first step is to measure out a cup of brown rice and 2 cups of water and place it in a rice cooker. If you don't have a rice cooker, simply add the rice and water into a pot and cover for about 20-30 minutes, or until the rice is soft and cooked. On a cutting board, peel the onion and chop up it up into small pieces.


Cut the raw chicken breast into bite size pieces so that the chicken will cook faster and easier. I didn't add any spices, but just added some cooking oil to the pan. To make sure the chicken is fully cooked, cut open one of the largest pieces and make sure there is zero red/pink sections on the inside. Once cooked, set the chicken aside to be added to the dish later.


In a new pan (or same pan as long as you clean it because it touched raw chicken!), add the bag of green beans and follow the directions on the bag. Each bag may have a different set of directions. My particular bag stated to add some water and boil. At the same time, add the chopped onions. When the onions start to become clear, add the cooked chicken and the sauce. Stir well so that the sauce covers everything in the pan. By this time, the rice should be fully cooked. Add rice to a plate and scoop on some green beans and chicken! Best served with a cold beer.
